I’m a very lucky girl. I was blessed with two hands on parents. Not everyone is given that gift, and I’m very thankful for that.

It’s Father’s Day Sunday, and I’m reminded again . . . I’m a very lucky girl!

Even at a very young age, I quickly realized how much my Dad loved me. I grew up with brothers and my Dad was my great protector. It didn’t seem fair at times, but I sure understand it now. When I was dating . . . I looked for a man that was like my Dad. He was & still is kind, generous, thoughtful, hard working, fun, confident, fearless & strong. I married a man just like that 35 years ago. I’m a very lucky girl. I found a quote that I really like, but I can’t give credit to whom ever wrote this quote. Author credit wasn’t given. If you know the author, please pass it along. We raised 4 daughters, and so this quote seems so fitting. My Dad always made me feel important and as if I was his only care. I have a sweet husband, who never, ever, ever, ever seemed anything but absolutely thrilled to have all girls! I’m a very lucky girl.

Raising a girl takes two parents:
A mom to show you how to be a woman.
A dad to show her how to be independent.
A dad’s job is to make his daughter courageous & fearless and make her feel beautiful.
To give her a sense of adventure.
To make her feel secure and confident.
The relationship between a dad and daughter is very simple.
She will love her father and trust him completely, forever.
He’s her first love.
He’s her first hero.
The first important man in her life.

Thank you Dad, for giving me that gift . . . Thank you honey, for giving that gift to our daughters.

I’m excited to share another fabulous, easy Father’s Day recipe with you . . . just in case you’re cooking for someone important in your life this weekend. In fact . . . I’m serving this, along with the Marinated Grilled Flank Steak that I posted earlier.Sweet and Spicy Pork – Slow Cooked (1)You can grab all the ingredients you’ll need, in just minutes. A simple sear on the grill, which is optional and then the pork is ready to toss in a slow cooker. When it’s done . . . you can slice it, or take a fork and pull it apart. Sweet & Spicy pulled pork is perfect served on burrito sized flour tortillas or over salad greens.

Sweet and Spicy Pork – Slow Cooked (2)Slice & Serve the Pork & Steak with side salads, chips and good crusty rolls. For dessert, you could serve: Strawberry Blueberry Cheesecake, German Chocolate Cake or Glazed Angel Food Cake. If slices aren’t your thing, then take a fork & pull the very tender pork & steak apart. (Think pulled pork and bbq beef) and grab a soft flour taco or burrito. Topwith: Black beans, sour cream, shredded cheeses, Guacamole, lettuce, Salsa, Rice and let them roll! Serve the burritos with salads, chips and dessert. Either way, you have a good feast. I already posted the Flank Steak Recipe, so let me show you just how easy the Sweet & Spicy Pork Tenderloin comes together.

Sweet and Spicy Pork – Slow Cooked (3)I opted to use a Pork Loin, instead of Pork Tenderloin. Either will do. You can use a Pork Tenderloin Roast as well or any pork roast, as long as it’s not too fatty! Pork Loin or Pork Tenderloin is my favorite. Pork Loins tend to be BIG. They serve a lot of people. fyi: Pork Tenderloin is a tad more expensive cut and smaller in size. I chose to sear the pork loin before tossing it into the slow cooker. That part is optional. Turn your grill on and let it get nice & hot. Place the loin on the grill and let it sit about 5 minutes per side. I cut the Loin in half, simply so that it would fit inside my slow cooker.

Sweet and Spicy Pork – Slow Cooked (4)Combine all of the other ingredients in a blender and mix. (Remember use only the adobo sauce, not the chilies. I put the entire can of chilies in a small strainer and pour the Dr. Pepper or the Root Beer over it to get as much of the sauce as possible.) I fear that it you use the chilies . . . it would start you on fire!!! It’s pretty spicy as is. That’s your choice.

Cook on low heat for 8 hours or on high heat for about 5 hours. Remove the pork from the sauce and slice or pull apart. Perfect sliced or pulled apart and used for Sweet Pork Burritos or Salads! recipe adapted from: Romney Family Table Cookbook

Ingredients

  • 4 to 5 pounds pork tenderloin or pork loin ( or other pork roast)
  • 2 (12-ounce) cans Dr Pepper or Root Beer (do NOT use diet or generic brands)
  • 1 packed cup of Brown Sugar
  • 1 cup white sugar
  • 1 (7-ounce) can chipotle chilies in adobo sauce (use only sauce, not the chilies!)
  • 6 ounces mild or medium-hot red taco sauce or you can use instead 1 cup ketchup for a milder taste
  • 2 cloves garlic, crushed
  • 1 teaspoon dry mustard
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon smoked paprika

Instructions

  1. Place the pork roast in a large slow-cooker pot. Combine all of the other ingredients in a blender and mix. (Use only the adobo sauce, not the chilies. I put the entire can of chilies in a small strainer and pour the Dr. Pepper of Root Beer over it to get as much of the sauce as possible.)
  2. Pour the blended sauce over the pork and cook on low heat for 8 hours or on high heat for 5 hours. Or cook until the meat is fall apart tender! Remove the pork from the sauce and pull the pork apart, or slice. Return pulled pork to the sauce in the slow cooker and heat through on low.
  3. To serve: Serve in slices or Spoon pork into burrito-sized flour tortillas or over salad greens. Top with any of the following ingredients as desired:

  10. Cilantro Lime Rice
